HOW DO WE PRODUCE CAVIAR?

As you know, the quality of caviar depends on the conditions of keeping the fish and the quality of the feed. There are not many sturgeon farms in the world that produce caviar in a legal, environmentally friendly way. First, we select the best Siberian sturgeon fry, then for 10 years we carefully raise them to full maturity in the northern Baltic. There is no industrial production here. We grow fish in the purest natural lakes of Latvia, similar to the natural habitat of sturgeon. Ripe females move to a closed ecosystem and live in specially prepared and ozone-rich water. We do not use stripping eggs from a fish, because as a result, the eggs are crushed, and the product loses its visual appeal. We feed the fish with special feed brought from Germany, without GMOs and harmful substances. Its composition is identical to the natural diet of sturgeon in a clean natural ecosystem. The dry salting method (Malossol) we use to ensures that only caviar and 2.6% salt are in the jar you open. And yes, our fresh fish goes straight to your table!

  • This authentic technique allows us to abandon the use of artificial additives
    We have supplemented the standard fish farming technology with our own method. Thanks to our developed and patented water treatment system, it becomes so pure and oxygenated that it surpasses even the natural habitat of the sturgeon. The innovation allowed us to abandon the artificial additives, hormones, antibiotics and preservatives when breeding sturgeon.
  • Biomechanical filtration treatment and ozonation of water
    We carry out biomechanical filtration water treatment in the last 2 months of maturation of broodstock and ionization of water in the last month of sturgeon keeping. Water saturated with ozone is purified and is practically sterile, does not contain any impurities and organics. The structure of the water becomes identical to the natural habitat of the sturgeon, and even surpasses it in some parameters.
  • Improving the taste of caviar due to ozonation
    Ozone not only purifies water. Remember the special freshness and purity of the air in the forest, near waterfalls or after a thunderstorm. It is ozone that saturates the cells of the body with oxygen and gives us a state of freshness and inner harmony. Now imagine what incredible comfort the fish feels before it gets to your table!
